It's time to dehydrate the peppers for spice. Yellow Jamaican Mushroom, Jalapenos, NuMex Sandia Select and White Habaneros are in the dehydrator this weekend.

That is very cool Mike. I have always dehydrated my peppers by cutting them in half lengthwise first. I would think that these will take a long time to dehydrate whole. What are you going to do with them after you dehydrate them? I dehydrated some jalapeños in July from my outdoor garden, but I don't really know how to use them.

It does take longer. I pierce the peppers several times. Even the white habaneros were jabbed. They should take about 36 hours at 125°f. I used to cut mine in half, too. But seeds got everywhere. Here I retain the whole pepper. There is no real cleanup. Other that the picking and piercing the peppers, there is no prep time, either. I will initially just toss them in plastic bags. But there will be more to dehydrate next weekend. So the spice grinder will have to wait.

That sounds great. You grind them all together for a super hot spice to add to any dish. I love it. Sounds amazing. Enjoy!

It also makes a terrific Fire Cider. I mix a spoon of this with ginger, turmeric, garlic, lime juice, honey and apple cider vinegar. Blend those and have a shot to get rid of colds.

I think you've mentioned elsewhere that you have an Excalibur? Your trays look very different than the ones that came with my Excalibur. Have you replaced the originals or maybe you have a newer or different model than I do? Anyway, looks like a great project. I think I'm a tad envious!

Yes, I upgraded the trays. These are much easier to clean and they don't stain like the plastic ones.

I just looked online and found some purchase options. In recent years, I've not used the dehydrator too often. And when I have, it is mostly to make "healthy" and "low cal" dog treats. Like copycat Sam's Yams. But I can foresee many other options to use with the fruits of the AG. I do love sun-dried tomatoes. Have you tried them in the Excalibur? The yams do make the whole house smell like the holidays...LOL.

Here are the first ones coming from the dehydrator. I think they look pretty cool. This is a great way to store peppers. The water may be gone, but the flavor and nutrients are all still there. The jalapenos aren't done yet.
