This is getting closer to harvest! I'm keeping an eye on it to make sure I can harvest it before it releases spores everywhere.

ERR0R1755, at this stage the larger ones will begin toughening.
The best way to preserve them without loss of flavor is to partially cook them, then freeze them.
You can dry them, but will lose a lot of flavor and texture dehydrating oyster mushrooms.
I would begin feasting on them at this point!

I will harvest them today then! I'm sure they'll all get eaten today, but I'll save a few small ones to dehydrate as an experiment.

I showed my husband and he thought it was cool. I do not eat mushrooms but if I ever do try these I will save them to prepare for him in a dish.
Can this draw in bugs or insects? If so I may not try until summer and keep it outside in the shed.

Mushrooms spores are the equivalent of seeds for mushrooms, except it's more like a powder and it goes everywhere. Like any dust, they can be irritating if you breath it in, but it's normally not harmful - just messy. If the spores land somewhere that they can take hold, such as a soaked block of sawdust, then they'll colonize that and start to create more mushrooms.
