The herbs that I planted in February are really insane! I can’t keep up with them, by way of eating them, I mean. I bought a dehydrator for outside grown herbs last summer but didn’t get a chance to use it yet. Is there a time frame for picking them to dry them? What do you all do to avoid waste?

I harvest herbs and place them in containers in my freezer. While they may not be fresh picked, they are fresh none the less. Of course as you let them defrost they can get soggy, so when I need them I open the container, pull some out and crush them with my hand into what I am cooking and the taste is very fresh. I do this with all my herbs.

I don't grow a lot of herbs. What I do grow, I either use fresh or gently dry them on a paper towel on top of a Bounty light. Then I quit growing them until I use most of them up.
I don't like using my dehydrator on them because it seems like they do not retain their flavor as well
I don't freeze mine because I don't have freezer space. If I did, I would freeze them on cookie sheets, then bag them so I could pull out a little at a time -- which I am guessing is what Shawn does.

I just place them in containers... I have these and these in 8oz, 16oz and 32oz.

I do freeze some of mine too. Some I place in bags & put in my salad fixings drawer, then I add to salads as needed. I also use them as an incentive to make something from them, sooner, rather than later! Right now, I've got a couple of water filled glasses sitting on the counter filled with basil...reminding me I need to make a basil dish really soon! Fortunately we love basil!

My AG parsley isn't yet big enough to consider, but when I grew curly parsley in the garden I washed it thoroughly, dried it in my salad spinner, then chopped it finely in the food processor. I stored the chopped parsley in a margarine container in the freezer. When I wanted some for a soup I just scraped or cut off a portion. It tasted pretty fresh.

I have heard of people blending fresh herbs in a blender with a little oil to make a sort of crude pesto, then freezing it in ice trays in the freezer. Has anyone tried that? Do the ice cubes become solid with the oil? I wouldn't think they would.

Hello bigshot, I have actually placed fresh herbs in an ice tray and then pour EVOO and froze. Depending on how pure the olive oil is will determine how cloudy it is. But yes it does become a solid oil block.
