I started this in the seed startrr with plans to grow it in a tote and let it head. But my totes will not be finished until later today, so I may just eat it soon ans start more.

No, I deliberately chose a variety with a smaller, loose head for space restrictions. If I remember correctly, it should get about 7-9 inches tall.
