Friend's recently gave me a bottle of "Ginny's Seasoning" they found at a local store...for obvious reasons. Maybe you could make a "Mike's Seasoning" or something like your own version of a Cajun Seasoning Blend, something like Slap Ya Mama -- could make a fun Christmas gifting thing...or just a way to use some of your peppers in another way yourownself!

I make pepper powder every six months or so. But I stick to either jalapeno or habanero. And those usually come from the Mexican grocery store, when I can find them ripe. The blends all end up tasting too much alike, and I can make these whenever I want, for the most part. Go to the store. Then fire up the Excalibur.

I posted a pic Wednesday night. I will take a pic tonight and may pick them tonight, but I have a colonoscopy pre-appointment this afternoon so maybe not. Almost all are solid red.
I will take at least one more photo before they are harvested.

It's time to harvest everything and start fermenting. Maybe a green and red sauce? We'll see after fermenting.

Here is the first two quarts of fermented veggies in a gallon bag. Boy did that shrink down. The smell is incredible. Strong! These are in the freezer now. I will harvest the rest tomorrow. Then their fermentation begins. I'm sterilizing the gear now. But I'm out of steam, today. Tomorrow the harvest. Then I make chili. Then the Michigan/Michigan State game.
