Finally I found some decent 8"x12" lunch trays that fit under the AG Harvest without expanding the footprint very much.

Do you have a restaurant supply store nearby? Like U.S. Chef's Store (used to be Cash & Carry or Smart & Final). If so, check them out. You may find a similar product for less $. That's where I get mine.
