Can a pepper plant produce more peppers than it can reasonably support? I have 5 pepper plants growing right now, and 3 are short but they have so many peppers/buds already that I can't imagine most of them growing to full size...
Has anyone ever removed a few to try to increase the size/quality of those that remain? If so, how and when did you decide which ones to remove? Did it have the intended effect?

Great questions. I have the two pepper plants in germination, and I ordered a BUNCH more to try later. I could use these answers, too.

I’ve never been so lucky to have so many peppers at once. Then again, mine drop a number of buds and infant peppers every time, so maybe that’s the plant’s way of thinning the herd. Same with my avocado tree outside. It starts out loaded with blossoms, then it drops a ton and makes a huge mess before developing the buds that remain.

I've had 20 jalapeno harvests coming from a single plant in a harvest. They do look a bit weighed down and the size is inconsistent at that point, but it never occurred to me to sacrifice a few. Good idea.

Some pepper plants drop lots of blooms. And they continue to do so until the plant is ready to set fruit. Don't worry much about the blooms that fall. If the plant is getting crowded, the take out leaves, not blooms. My philosophy is to monitor the plant, but leave it alone for the most part. Don't over pollinate, no more than twice a day (I usually only do it once). Once the main fruit is set, then start taking out leaves. I don't have the nerve to take out too many, though.

Mine has way too many flowers and drops more than 15 a day, along with the lower leaves. I shake it once a day to pollinate, which drops the flowers and leaves in the process. I have read this is completely normal. The plant will decide what it can support... I have also read about sacrificing some to make bigger peppers. I will be experimenting on all of this as I am at the point to make these decisions. My results will be posted in my hot pepper thread. I wish you luck in your decisions Maybe we can all learn from our varied results.
