Yeah, but I don't have any energy to harvest, cut and pickle tonight. We are going through a really nasty winter storm today. The drive in to work was easy. Home about wiped me out. First clearing the snow off the car. Then a half hour drive normally became an hour and a half. It is unsafe to be outside today. And I have an audit at work tomorrow, Goodie! Hopefully the audit went well. I continue to envy your lush pepper gardens!

Thank you, the audit went fine. I've gone through these things twice a year for 20 years. There is nothing new to them anymore. The snow storm passed and driving wasn't bad. Some areas go over 15 inches of snow. I think we got around 8 inches at my house. This too is nothing new here in Michigan. On to the peppers. These are very strange. 80% of them stay small and mature that way. Then you get ones larger than jalapenos. Weird. I harvested today. The photo shows my largest stainless bowl I have with the harvest. After cutting these into rings, I got exactly 4 tightly packed pints to go into the fridge tomorrow. The brine is simple, 1 Tbs. sea salt in 2 cups white vinegar. You can use water and vinegar, but I'm keeping it simple. If you add anything else with Pepperoncini, it doesn't taste right after pickling.

I am happy the audit went well and the driving was not bad. As for the peppers, wow you sure have a large wonderful harvest.

Yes, I leave the seeds in, here. A lot of these peppers are only 1/2 inch in size. Cutting these peppers up was a real pain, a real time consumer for these neuropathetic hands of mine. But it got done.
This pickling project has been really successful, so far. After a week in the fridge these peppers are delicious. Yesterday, I made a 4-egg scrambled egg patty loaded with pickled poblanos and cheese. I took it to work to make a wrap with. It was a terrific way to start the day.
I have a busy weekend planned. I have to travel to a Target some 20 miles away today to pick up two more flats of canning jars. These jars are getting difficult to find in stock. I have Pot-A-Penos, Sweet Pickled Peppers and more Poblanos and Anaheims to work on.
I visit my parents today. After that, my best friends widow needs help getting her computer to work. I want to check in on his Dad, today too. It's been rough for them since the funeral last week.
Tomorrow, laundry. Hopefully, I can fin in a nap or two. Wonderful another 5° morning. Anybody ready for Spring?

mike, if you have a hardware store that is closer than Target, you might try them next time you need canning stuff. Ace and TrueValue often have a canning section and might be better stocked as not so many folks think to look there?

In the past I always used the local grocery store. The last two times I placed an order they tried to substitute another size. Everyone has been out of the pint wide mouth. But I always find a Target that has them. I don't even shop at Target, otherwise.

We don't shop at Target much anymore either. With regard to the Hardware stores, ours tend to be more of a Farm & Garden kind of place, so maybe they stock a tad differently than others, anyway?

campingcorgis, we are in a small town and there is a lot of agriculture in our area. I have a Tractor Supply right down the street.
Our hardware stores also tend to sell more garden and food related items.

The closest place to work is a Home Depot. That would be ideal, but they too were out. Everybody has the regular mouth. Wide Mouth is no dice...

I want the regular mouth as I have a lot of specialty lids that I use to re-purpose the canning jars. They don't work on the wide mouth jars. Sigh, all I find are the wide-mouth jars.
